This recipe is all about the chicken, so picking the right cut is the key to success. Thighs on the bone lend themselves really well to slow cooking as they don’t dry out at all. Skinless boneless thighs and chicken marylands would also work well.

Ingredients
- 1 brown onion, sliced
- 1 tbsp olive oil
- 1kg chicken thigh cutlets (skin on, bone in)
- 1 1/2 cups chicken stock
- 1 tbsp cornflour
- 1/3 cup honey
- 2 tbsp seeded mustard
- 1 tbsp dijon mustard
Method

Step 1Place onion in the bowl of a slow cooker.

Step 2Heat oil in a frypan over medium heat and brown chicken pieces well on both sides, seasoning well with salt and pepper. Transfer to the slow cooker and arrange in a single layer on top of onions.

Step 3Place a little of the chicken stock in a large jug with the cornflour and mix to create a smooth slurry. Whisk in remaining chicken stock, honey and both mustards. Pour this mixture over the chicken in the slow cooker. Cook on high for 5 hours or until chicken is tender.

Step 4Serve with rice, buttered pasta or mashed potatoes, and steamed green vegetables.
