It doesn’t get easier than this French onion chicken, and the slow cooker does all the work. Serve with mashed potato and steamed green veggies.
Ingredients
- 1.2kg chicken thigh fillets
- 40g sachet French onion soup mix
- 1 brown onion, sliced
- 3 cloves garlic, crushed
- 2 carrots, sliced
- 1 cup Liquid Stock Chicken Style
- 1/4 cup Woolworths Thickened Cream
- small sprig thyme
Method
-
Step 1Trim thigh fillets and cut each into 3-4 pieces. Place in bowl of slow cooker. Top with onions, garlic and carrots. Sprinkle over French onion soup mix and add plenty of cracked pepper, then stir everything together. Pour over chicken stock and cream, and tuck the thyme in. Cover with a lid and cook on high for 4 hours or low for 6 hours.
Recipe Notes
For extra flavour, you can brown the chicken pieces in a frypan before adding to the slow cooker.
Choose a salt-reduced soup mix then season to taste, so you have control over the salt quantities.
