Ingredients

  • 1kg mixed dried fruit
  • 395g tin condensed milk
  • 1 cup milk
  • 1 cup Baileys Irish Cream
  • 1 orange, zested and juiced
  • 2 cups plain flour
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp allspice

Method

  • Step 1
    Place dried fruit in a bowl with condensed milk, milk, Baileys and orange zest and juice. Stir well, cover and leave to soak overnight in the fridge.
  • Step 2
    Remove from fridge and bring to room temperature. Stir well. Combine flour with spices, then fold through dried fruit mixture.
  • Step 3
    Line base and sides of a slow cooker with 2 layers of baking paper, greasing the top layer with a little oil or butter. Pour in batter and smooth over the top. Place a tea towel over the top of the slow cooker just under the lid. Cook for 4 hours on low, until a skewer inserted into the centre comes out clean. Remove from slow cooker and allow to cool.
Recipe Notes

Depending on your slow cooker, your cake may need closer to 6 hours. Check it at the 4 hour mark to see if it is done.

The towel absorbs condensation in the slow cooker to prevent it dripping down onto the cake.

The cake will keep for several weeks wrapped well in baking paper and foil and stored in the pantry.
