Slow Cooker Chicken Fajitas

These simple slow cooker chicken fajitas are a case of set-and-forget simplicity. Just reheat the flavour-filled chicken mixture at dinnertime and serve on some warm tortillas with all of your favourite fajita sides - packed full of flavour and vegie goodness. - Greer Worsley

Ingredients

  • 1 brown onion
  • 2 red capsicums
  • 1 green capsicum
  • 3 chicken breasts large
  • 3 garlic cloves crushed
  • 400 g canned crushed tomatoes
  • 1 lime juiced
  • 1 stack tortillas *to serve
  • 1 bowl guacamole *to serve
  • 1 bowl sour cream *to serve
  • 1 handful coriander *to serve

Seasoning mix

  • 2 tsp chilli
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp brown sugar
  • 1 tsp garlic powder
  • 1/2 tsp ground cumin

Method

  • Step 1
    Peel onion and slice lengthways. Remove core and seeds from capsicums and slice into long strips. Place half the onion and capsicums into the base of a slow cooker.

  • Step 2
    Seasoning mix: Combine all ingredients in a small bowl. Place chicken breasts directly on top of capsicum and onion in slow cooker. Sprinkle half the seasoning mix over the chicken breasts. Turn and sprinkle remaining seasoning so that chicken is well coated.
  • Step 3
    Distribute garlic, tinned tomatoes and remaining onion and capsicums over chicken pieces. Squeeze over lime juice. Cover and cook on low for 4 hours.
  • Step 4
    Remove chicken from slow cooker and slice, or shred. Return to sauce and stir to combine. Serve on warmed flour tortillas with guacamole and sour cream on the side, and picked coriander leaves for garnish.
Recipe Notes

Make it even easier by using a packet of store-bought taco seasoning in place of the homemade seasoning mix.

Serve with extra lime wedges for squeezing.

Adjust the amount of chilli powder depending on how strong it is and your preference for spice.
