You won’t be able to resist this delicious butter chicken after enjoying the spicy aromas wafting from the slow cooker all day. Begin the night before by marinating the chicken in a simple spice mix, then just toss everything into the slow cooker ready for a delicious dinner.
Ingredients
- 1.25kg chicken thighs
- 1 cup natural yoghurt
- 2 tsp ground cumin
- 2 tsp ground turmeric
- 1 tsp ground coriander
- 3 tsp garam masala
- 1 tsp salt
- 3 cloves garlic, crushed
- 1 tbs grated fresh ginger
- 1 cup tomato passata
- 1/4 cup tomato paste
- 1 cup cream
- 2 tsp caster sugar

Step 1Trim thighs and cut into halves, or quarters if they are large. Combine yoghurt with spices, garlic, ginger and salt. Add chicken and stir to coat. Cover and refrigerate overnight or for at least 4 hours.

Step 2Place chicken with the marinade into the bowl of a slow cooker. Whisk together passata, tomato paste, cream and sugar, and pour over chicken. Cook on high for 4 hours. Check for seasoning and add salt if required.

Step 3Serve with steamed basmati rice and warm naan breads.

Allow for overnight or at least 4 hours marinating time.
