This BBQ-flavoured roast beef is cooked low and slow until fork tender - making it the perfect dinner meal. Barely any preparation is required so you can pop it on in the morning and have a mouthwatering meal by the end of the day. My favourite thing about cooking a road with a slow cooker is that those delicious spices infuse even more deeply into the succulent meat. Delicious spiced aromas will fill the room and will ensure your family will be asking: “is it ready yet?” Serve it in place of your traditional roast, or you can shred the meat and serve it on sliders with coleslaw, or as a taco or nacho filling.
Ingredients
- 1 tbsp olive oil
- 2kg piece beef blade
- 1 brown onion, sliced
- 1 tbsp ground cumin
- 1 tbsp ground paprika
- 1 tsp ground coriander
- 2 cloves garlic, crushed
- 1/2 cup brown sugar
- 1 tsp salt
- 1/2 cup tomato passata
- 1/4 cup barbecue sauce
- 1 tbsp Worcestershire sauce
- 1 tbsp apple cider vinegar
Method
-
Step 1Heat oil in a large frypan over high heat and brown beef well on all sides.
-
Step 2Place onion in the bowl of a slow cooker. Add browned beef. Combine spices with garlic, sugar and salt in a bowl and sprinkle over the beef, turning to ensure it is well coated. Mix tomato passata, sauces and vinegar in a small jug and pour over beef. Cover with a lid and cook on low for 8 hours or until meat is fork tender, basting with sauce several times during the cooking process.
-
Step 3Remove meat from slow cooker and serve with sauce spooned over.
Recipe Notes
Notes:
- You can spoon off the excess fat, or transfer the meat and sauce to a dish and allow to cool completely, making it easy to remove the solidified fat. Reheat well before serving.
- Use any whole cut of stewing beef - brisket or chuck would also work well.
