For this dish, as the mince is the hero, you will want to brown it very well so that it begins to caramelise, increasing the flavour. The same goes for the onion. Cooking it until golden will make this dish even tastier.
Key ingredients in this savoury mince recipe
Go for a lean beef mince for this recipe. As it’s the main ingredient, a leaner mince will prevent this meal from tasting too fatty. Using beef stock will ‘beef’ up the beef mince flavour, however chicken stock or vegetable stock would also suffice.
The Dijon mustard adds a subtle tang to the mince mix, in addition to the tomato sauce, but you can omit it if you prefer.

Ingredients
- 3 tbs oil
- 500g lean beef mince
- 1 carrot grated large
- 1/3 cup beef stock (liquid)
- 2 tbs fresh parsley
- 30g butter
- 1 onion chopped
- 1/3 cup tomato sauce
- 2 tsp Dijon mustard
- 1 garlic clove
Method

Step 1Heat oil and half the butter in a hot pan and cook mince until well browned.

Step 2Transfer mince to a bowl and set aside.

Step 3Add remaining butter to a pan and cook onion and garlic on medium heat until golden.

Step 4Return meat to the pan and stir in carrot, tomato sauce, stock and mustard.

Step 5Reduce heat and simmer the sauce for 5-10 minutes or until the liquid has thickened.

Step 6Stir in parsley and season with salt and pepper, if required.

Can I add anything else to this savoury mince?
I often like to boost the vegies in a savoury mince, and the best way I’ve found to do this is to use a bag of frozen mixed peas, corn and carrot. Stir through 1 cup of the frozen veg in step 4, before adding the sauce, stock and mustard.
Can I freeze this savoury mince?
You can freeze this savoury mince for up to 3 months. Simply place it in an airtight container or in portions in sealable bags. To serve, thaw it in the fridge overnight and then gently reheat either in a saucepan or in the microwave.
