Great for when you have a whole heap of silverbeet and no imagination.
Ingredients
- 1 olive oil spray
- 1/2 cup water
- 1 bunch silverbeet large
- 10 sprigs spring onion chopped
- 3 garlic cloves crushed
- 2 pinches ground pepper fresh *to taste
- 200 g ham (deli) chopped
- 100 g cream cheese
- 1 puff pastry
- 1 tbs parmesan cheese
Method

Step 1Spray stoveproof/ovenproof (non-stick) pan with Olive Oil spray. On stovetop, add spring onion and finely chopped stalks silverbeet.

Step 2Saute until warm, add crushed garlic and cracked pepper.

Step 3Add shredded silverbeet leaves and water.

Step 4Heat on high for 5 minutes with lid on, turn off and leave for ten minutes. Drain most of the liquid.

Step 5Add chopped ham to silverbeet and mix thoroughly.

Step 6Add tablespoon sized pats (dollops) of cream cheese over the silverbeet mixture.

Step 7Top with puff or filo pastry, forming a mound by pushing down at the sides.

Step 8Top with sprinkled parmesan and ground pepper. Spray or brush lightly with olive oil. Bake in oven for 15-20 minutes at 200C.

Recipe Notes
This is wonderful cold the next day. The cream cheese rids the silverbeet of that astringency which it tends to have. Filo pastry can also be used.
