Light and fluffy and so easy to make. Lovely Christmas morning breakfast. Serve with chilled champagne.
Ingredients
- 4 large egg
- 50 g butter cubed
- 4 tbs milk
- 1 tsp butter
- 1 tbs parsley chopped fresh
- 4 slices smoked salmon
Method

Step 1Whisk eggs, milk, salt and pepper. Mix butter through egg mixture.

Step 2Melt extra butter in a frying pan. Pour egg mixture into pan.

Step 3When partially cooked, slowly scrape egg mixture towards the middle of the pan. Continue doing this until just cooked.

Step 4Serve on hot toast.

Step 5Top with smoked salmon.

Step 6Sprinkle with parsley.
