Authentic Scottish fudge, that is firm and dry on the surface, but once you pop it in your mouth, it crumbles and easily melts.
Ingredients
- 4 1/2 cups sugar
- 395 g condensed milk
- 1 cup milk
- 110 g butter chopped
Method

Step 1Warm milk on low heat in a large electric frying pan.

Step 2Add sugar gradually to the milk, stirring constantly until dissolved.

Step 3Add butter and allow to melt.

Step 4Add condensed milk.

Step 5Bring to the boil, stirring constantly for 20 minutes until a small soft ball forms when a bit of the mixture is dropped in cold water.

Step 6Remove from heat and beat until thick and creamy.

Step 7Pour into lined tray and cool on the bench. Remove from tray and cut into squares.
