This is a basic scone recipe which you can make sweet or savoury with a couple of very minor adjustments, makes just enough for morning tea. - Rooster 55

Ingredients

  • 2 cup plain flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 50g butter chopped
  • 1/2 cup milk
  • 1/2 cup cold water
  • 1 tbs sugar
  • 1 cup sultanas

Method

  • Step 1
    Preheat oven to 180-200C.
  • Step 2
    Sift flour, baking powder and salt together.
  • Step 3
    Rub butter into flour.

    Add sugar, if making sweet scones.
  • Step 5
    Add flavouring of choice.
  • Step 6
    Mix in liquid about ½ cup at a time. The dough should be quite sticky. Add a little more liquid, if required.
  • Step 7
    Tip out the dough onto a floured surface, and sprinkle with a little flour.
  • Step 8
    Pat into a log about 4cm x 6cm x 30cm.
  • Step 9
    Cut into pieces to make 6-8 scones.
  • Step 10
    Place scones onto baking tray and bake for 12-15 minutes.

Recipe Notes

Only add sugar for sweet scones. You can make these scones with many variations, e.g. cheese and bacon, ham, leftover vegetables such as broccoli or pumpkin, dates, sultanas or frozen blueberries. If using blueberries mix dough quickly so that it doesn't get too wet. May be made plain to have with strawberry jam and whipped cream (add the sugar if you are doing this). If you are not eating them all and want to keep them for a day, dip the scones topside down into a small bowl of milk (about halfway down the sides) straight from the oven.
