Savoury scrambled eggs, feel free to add chopped bacon.
Ingredients
- 2 egg beaten
- 1 tbs olive oil
- 1/4 onion diced medium
- 1/2 tomato diced fresh
Method

Step 1Heat the oil in a pan.

Step 2Add salt and pepper to eggs.

Step 3Add the onion to heated pan and cook for 2 minutes until softened.

Step 4Add the tomato and cook for 1-2 minutes until soft.

Step 5Spread the onion and tomato across the pan.

Step 6Add the eggs and swirl pan so that egg covers the base of the pan.

Step 7Let the egg heat momentarily, then using a wooden spoon stir the mixture until eggs are cooked but still soft.

Step 8Serve with buttered toast and bacon.
Recipe Notes
Once the egg hits the pan it cooks very quickly so have a wooden spoon and a serving plate on hand.
