I made this at high school many years ago. It is still a tasty favourite.
Ingredients
- 1 frankfurts
- 1 potato small
- 1/2 tsp parsley chopped
- 1/4 onion diced small
- 1 tbs extra tasty cheddar cheese grated
- 1 seasoning
- 1 butter melted
Method

Step 1Cook potato, mash well with salt and pepper to taste.

Step 2Add parsley, onion and cheese.

Step 3Mix until creamy.

Step 4Split saveloy/frankfurt until almost in half and flatten.

Step 5Pile potato mixture on top.

Step 6Brush with melted butter.

Step 7Top with bacon.

Step 8Bake in hot oven until golden brown.
Recipe Notes
Although recipe states to serve one, it can be adapted to make more servings. I prefer to use the English saveloy.
