Ingredients

  • 1 red capsicum
  • 1 Lebanese cucumber
  • 1 carrot, finely grated
  • 100g tasty cheese, finely grated
  • 4 slices white Low GI bread, sandwich sliced lengthwise
  • Lurpak* Softest Butter

Method

  • Step 1
    Finely grate the capsicum and cucumber. Wrap in paper towel to squeeze out any excess moisture and place in a bowl. Add carrot and cheese and mix to combine.
  • Step 2
    Spread each slice of bread with butter.
  • Step 3
    Divide the ‘rainbow’ mix in 4 and spread a portion over each slice of bread taking it to the edges. Season with salt and pepper (optional). Remove bread crusts. Roll up and cut each roll into 4 pinwheels to serve.
