Creative back-to-school lunches don't need to be complicated! These savoury rainbow pinwheels are fun to eat and easy to make.
Ingredients
- 1 red capsicum
- 1 Lebanese cucumber
- 1 carrot, finely grated
- 100g tasty cheese, finely grated
- 4 slices white Low GI bread, sandwich sliced lengthwise
- Lurpak* Softest Butter

Method

Step 1Finely grate the capsicum and cucumber. Wrap in paper towel to squeeze out any excess moisture and place in a bowl. Add carrot and cheese and mix to combine.

Step 2Spread each slice of bread with butter.

Step 3Divide the ‘rainbow’ mix in 4 and spread a portion over each slice of bread taking it to the edges. Season with salt and pepper (optional). Remove bread crusts. Roll up and cut each roll into 4 pinwheels to serve.
