This is a great recipe whether for snacks at a barbeque or just for the family - you just keep going back for more.
Ingredients
- 1 cup self-raising flour
- 1 cup plain flour
- 1/2 tsp paprika
- 1/2 tsp salt
- 90 g butter
- 3 tbs cold water
- 1 tbs oil
- 1 tbs lemon juice
Tomato sauce
- 2 tbs oil
- 1 onion
- 1 garlic clove
- 420 g canned crushed tomatoes
- 1 bay leaf
- 1 tbs brown sugar
- 1 1/2 tsp salt
- 1/2 tsp oregano
- 1 pinch ground pepper
Method

Step 1Sift flours, paprika and salt into bowl, rub in butter until mixture resembles breadcrumbs.

Step 2Combine lemon juice and water, sprinkle over ingredients in bowl. Mix to a firm dough, adding a little more water if necessary.

Step 3Chill for 1 hour.

Step 4Roll out thinly between two sheets of plastic on a floured board, to fit pizza tray.

Step 5Brush with a little oil, then sprinkle with grated Parmesan.

Step 6Topping: Heat oil and sauté onion until golden brown. Add garlic and remaining ingredients.

Step 7Bring to the boil, reduce heat and simmer, uncovered, for 30 minutes until thickened. Stir occasionally.

Step 8Spread crust with tomato topping, then add other toppings of choice.

Step 9Bake at 220C for 10 minutes.

Step 10Reduce temperature to 150C and cook a further 15 minutes until crust is crisp and cheese is golden.
Recipe Notes
Add topping of your choice. My topping is salami, mozzarella cheese, red onion, sliced stuffed green olives and sliced pitted black olives, mushrooms, sliced red and green capsicum, with more grated mozzarella cheese and Parmesan over the top. If you don't want to make the pizza dough just a bought one is fine. I also spoon 2 tablespoons of oil over the pizza to prevent it from drying out whilst cooking. Add basil to sauce if you wish.
