A loaf that's easy to make, handy to slice and freezes well for lunch boxes. It's delicious hot or cold.
Ingredients
- 3 cups pasta cooked
- 1 tbs butter
- 1 tbs olive oil
- 1/2 onion finely chopped small
- 1 garlic clove crushed
- 2 cups mixed vegetables grated
- 200 g baby spinach chopped washed
- 1 tbs fresh mixed herbs chopped
- 4 eggs
- 1/4 cup milk
- 1 tsp salt
- 1 1/2 cups tasty cheese grated
- 1/2 cup ham (deli) chopped
- 1 pinch pepper *to taste
Method

Step 1Preheat oven to 200C (180C fan forced).

Step 2Spray a 23 cm x 13 cm loaf tin with non-stick spray or line with baking paper.

Step 3Heat the butter and oil in a pan, cook the onion and garlic for 2 minutes.

Step 4Add the grated vegetables and cook for approximately 3 minutes until soft.

Step 5Add the spinach leaves and herbs and cook for 1 minute until wilted.

Step 6Whisk the eggs with the milk, salt and pepper.

Step 7Stir in the cheese, followed by the vegetable mix, then the pasta.

Step 8Place the mix in the loaf tin, pressing it down firmly.

Step 9Bake for approximately 45 minutes until set.

Step 10Cool 15 minutes before removing from tin.

- 1 13.5cm x 23.5 cm loaf pan
Recipe Notes
I prefer to use small pasta e.g. small macaroni or small pasta shells.
I like to use grated carrot and zucchini.
You can substitute ham with bacon, this ingredient is optional.
It’s easy to adapt the recipe according to personal taste.
A great lunch to have on hand for a toddler and not too messy if you're out.
If putting in the freezer, let it get cold before cutting thick slices and wrapping them in plastic or foil.
