Ingredients

  • 2 slices bread crusts removed thick
  • 750 g sausage mince
  • 1/2 tsp salt and pepper
  • 2 tbs water
  • 1 onion grated
  • 1/2 tsp mixed herbs
  • 500 g puff pastry
  • 1 egg yolks
  • 1 tbs water

Method

  • Step 1
    Place bread into bowl, cover with cold water.
  • Step 2
    Allow to stand 10 minutes then drain, pressing out surplus water.
  • Step 3
    Place bread into bowl with meat, onion, mixed herbs, salt and pepper and mix well.
  • Step 4
    Fill a large piping bag with mixture.
  • Step 5
    Roll pastry into a large rectangle and trim edges.
  • Step 6
    Pipe sausage mixture lengthwise along one edge, turn edge of pastry over filling, then turn again so that the filling is completely enclosed in pastry.
  • Step 7
    Cut along edge of pastry with sharp knife.
  • Step 8
    Repeat with remaining filling and pastry.
  • Step 9
    Using back of knife, flatten rolls slightly at 1 cm intervals.
  • Step 10
    Brush with combined extra water and egg-yolk.
  • Step 11
    Cut rolls into 5 cm lengths.
  • Step 12
    Place on a greased oven tray, bake at 220C for 5 minutes.
  • Step 13
    Reduce heat to 180C, bake for a further 10 minutes or until pale and golden brown.
