Delicious no fuss pie that can be made a day or two ahead, taken on a picnic, eaten on its own or accompanied with salads and garlic bread. Loved by all except those watching their cholesterol count.
Ingredients
- 500 g sausage
- 150 g pecorino cheese grated
- 100 g low-fat cottage cheese
- 2 eggs
- 125 ml cream
- 2 ml ground nutmeg
- 2 g thyme
- 100 ml white fresh breadcrumbs
Method

Step 1Preheat oven to 220C.

Step 2Skin sausages, and with damp hands, firmly press sausage meat evenly into the bottom and up the sides of a 23 cm flan dish to form a crust.

Step 3Sprinkle half the grated cheese onto the pie crust.

Step 4Blend together cottage cheese, eggs, cream, and seasoning and pour into crust. Spread evenly.

Step 5Mix together remaining cheese and breadcrumbs and sprinkle over the pie.

Step 6Bake at 220C for 15 minutes, then reduce heat to 175C and bake for a further 25 minutes or until the top is golden brown and the filling is firm.
Recipe Notes
Pecorino can be substituted with Parmesan or cheddar cheese.
Can be served hot or cold. I prefer it cold - make two and keep one for snacks over the weekend.
Take on a picnic in a cooler bag.
