Ingredients

  • 1 cup almonds raw unsalted
  • 1/2 cup desiccated coconut
  • 1/2 tbs cacao powder
  • 1 pinch salt
  • 2 tbs extra virgin coconut oil

Filling and icing

  • 1/4 cup cashews raw soaked overnight
  • 1/4 cup coconut cream
  • 10 drops peppermint oil
  • 6 medjool dates pitted
  • 150 g 85% dark chocolate melted *to decorate

Method

  • Step 1
    Line a square baking tray with baking paper.
  • Step 2
    Blitz base ingredients together in a food processor. Transfer to lined tray and push down firmly and evenly to cover base. Refrigerate or freeze.
  • Step 3
    Meanwhile to make the filling, drain and rinse cashews and put into a clean blender or food processor along with all second set of ingredients. Blitz to a butter.
  • Step 4
    Remove base from refrigerator and spoon mixture over the top. Smooth out the top evenly. Refrigerate or freeze for a further 10-15 minutes.
  • Step 5
    Drizzle with melted dark chocolate, return to freezer to set for a few minutes.
  • Step 6
    Slice and serve.
