Looking for the best canned salmon recipe? These easy salmon cakes are a tasty twist on a simple dish. Quick to prepare, these patties are made with potato, cheese and breadcrumbs, giving a moist, delicious inside with a golden, crispy crust.
Ingredients
- 415g canned salmon
- 1 1/2 cups mashed potato
- 1 tomato diced
- 1 onion diced
- 1/2 cup cheese grated
- 1 egg lightly beaten
- 1 tbs lemon juice
- 1 tbs butter
- 1 cup dried breadcrumbs
- 1 tsp curry powder
- 2 egg whites
- 1 cup fresh breadcrumbs
- 1 tbs oil
Method

Step 1Combine salmon, mashed potato, tomato, onion, cheese, egg, lemon juice, butter, breadcrumbs and curry powder together in a large container with a lid.

Step 2Place into fridge, covered, for 1 hour.

Step 3Remove from fridge, and roll heaped tablespoonfuls of mixture into balls.

Step 4Coat each ball with egg white and roll in breadcrumbs.

Step 5Place the balls in a medium hot fry pan, and gently flatten slightly.

Step 6Shallow fry until breadcrumbs have become golden brown on each side. Remove, place on kitchen paper to drain.

Step 7Keep warm in the oven, whilst cooking remaining batches.

- 1 frying pan

Serve with peas, corn and julienne carrots, or on a burger with salad and sweet chilli sauce.
