Ingredients

  • 1 kg potato
  • 1 cup shallots thinly sliced
  • 2 cloves crushed garlic
  • 4 tbs milk
  • 1 tbs butter
  • 400 g canned salmon drained flaked
  • 220 g canned corn drained

Topping

  • 60 g butter melted
  • 2 cup fresh breadcrumbs coarsely grated
  • 1 cup tasty cheese grated
  • 1/2 cup parsley finely chopped

Method

  • Step 1
    Peel and quarter potatoes and boil in lightly salted water until tender. Drain and mash with milk and butter.
  • Step 2
    Immediately add shallots, garlic, salmon and corn kernels and stir to combine.
  • Step 3
    Spray a shallow dish with non-stick stick spray and spread salmon mixture into dish.
  • Step 4
    Combine melted butter, breadcrumbs, cheese and parsley and spoon over top of salmon mixture.
  • Step 5
    Bake at 180C for 30 minutes or until golden and crisp.
  • Step 6
    Serve with steamed carrots, broccoli and asparagus.

Recipe Notes

Use floury potatoes. You can try different combination of vegetables for a change.
