Saffron and Rice Pudding

This is an Iranian dessert. It's sweet and delicious and it has a very good aroma. I always make it when I have guests and they really like it. - NASSIM

Ingredients

  • 1 cup rice
  • 2 cups white sugar
  • 6-7 cups water
  • 4 tablespoons boiling water
  • 1/2 teaspoon saffron, powdered
  • 3 tablespoons, peeled and crushed almonds
  • Cinnamon

Method

  • Step 1
    Wash the rice and soak in water for an hour. Drain and rinse, then add water.
  • Step 2
    Bring to a boil until rice softens, for approximately 30 minutes.
  • Step 3
    Add sugar and allow it boil slowly for 15 minutes. Take care not to boil the mixture dry.
  • Step 4
    Add 4 tablespoons of boiling water to saffron powder, cover and allow to sit for 5 minutes.
  • Step 5
    Add saffron to rice and sugar mixture. Add the almonds. Allow to stand for 5 minutes.
  • Step 6
    Pour pudding into small bowls and allow to cool, until the surface becomes a little firmer.
  • Step 7
    Decorate it with cinnamon and crushed almonds or pistachios.
