My family loves rocket leaves and I try to create simple salads or adapt others to suit our taste.
Ingredients
- 2 bunches rocket leaves
- 1 sprinkle parmesan grated *optional
Dressing
- 1 white onion thinly sliced
- 4 tbs olive oil
- 1 splash lemon juice
- 1 tbs sumac
- 1 pinch salt and pepper *to taste
Method

Step 1Use enough lemon juice to cover the onion. Mix dressing ingredients and set aside. Allow to pickle for several hours or overnight until limp/pickled.

Step 2Lay rocket leaves in a salad bowl, mix in Parmesan cheese, if using.

Step 3Just before serving, pour dressing over and distribute onion evenly over the top.
Recipe Notes
Sumac is a Middle Eastern spice known for its tangy/sour taste.
The quantity in the dressing really depends on your taste. Alternatively, the dressing can be served on the side.
