The all-time classic choice for a Sunday lunch, roast lamb is an irresistible meal, sure to get the whole family to the table! With just five ingredients, this simple recipe uses honey and mustard to add beautiful flavour to the lamb leg.
Ingredients
- 1 1/2 kg lamb leg
- 1 splash olive oil
- 2 tbs honey
- 2 tbs wholegrain mustard
- 4 sprigs fresh rosemary *to taste *optional
Method

Step 1Use a knife to make small cuts in the meat.

Step 2Rub oil into meat.

Step 3Mix mustard and honey together, then baste the meat with mixture, pressing into the cuts.

Step 4Insert sprigs of rosemary into the cuts.

Step 5Bake at 180C for 1½ hours for medium-rare meat.

Step 6Rest meat in aluminium foil for 15 minutes before carving.

My lamb leg is a bit larger than 1.5kg. How long should I cook it for?
As a rough guide, lamb leg should be cooked at 180C for about 25-30 minutes per 500g for medium.
I'm worried the honey mixture might burn – should I cover the lamb with foil while roasting?
As a general rule with roast lamb, there's no need to cover the lamb with foil. As it cooks, it should turn golden brown, and the honey in this recipe might caramelise a little, but it should't burn.
