Packed with flavour!
Ingredients
- 1 whole chicken
Stuffing
- 250 g microwaveable brown rice
- 1 long green shallots finely chopped
- 1 chilli finely chopped small
- 1/2 tsp lemon zest
- 1 tsp lemon juice
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 cup peas *optional
Herb Butter
- 1/4 cup butter softened
- 1 tsp fresh thyme
- 1 clove garlic large minced
Method

Step 1Preheat oven to 200C (180C fan forced).

Step 2Mix together herbs, garlic and butter and make a pocket under the skin of the chicken using your fingers, careful not to break the skin. Spread the butter in the pocket.

Step 3Mix all stuffing ingredients and stuff into cavity of chicken. Cook in a baking tray for around an hour and a half, basting every half hour.
Recipe Notes
I had made the rice stuffing for a previous meal the night before and had it alongside some salmon. This was the leftover we had in excess and made into a stuffing.
