Ingredients

  • 1 whole chicken

Stuffing

  • 250 g microwaveable brown rice
  • 1 long green shallots finely chopped
  • 1 chilli finely chopped small
  • 1/2 tsp lemon zest
  • 1 tsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup peas *optional

Herb Butter

  • 1/4 cup butter softened
  • 1 tsp fresh thyme
  • 1 clove garlic large minced

Method

  • Step 1
    Preheat oven to 200C (180C fan forced).
  • Step 2
    Mix together herbs, garlic and butter and make a pocket under the skin of the chicken using your fingers, careful not to break the skin. Spread the butter in the pocket.
  • Step 3
    Mix all stuffing ingredients and stuff into cavity of chicken. Cook in a baking tray for around an hour and a half, basting every half hour.
Recipe Notes

I had made the rice stuffing for a previous meal the night before and had it alongside some salmon. This was the leftover we had in excess and made into a stuffing.
