This rice cooker cake is cooked in your rice cooker. Yes, that's right - rice cooker! It looks like a golden buttery cake, uses pancake batter and is so easy that you can get the kids to help you whip it up. What's not to love?
Ingredients
- 2 cups self-raising flour
- 2 tbs white sugar
- 2 eggs lightly beaten
- 1 1/2 cups milk
Method

Step 1Place flour, sugar and eggs into a bowl and whisk together while adding milk a little at a time until all ingredients are incorporated.

Step 2Pour cake mixture into the bowl of a rice cooker and set the rice cooker to cook. If you have an automatic rice cooker, you may need to push the button down 2-3 times until your cake is cooked.

Step 3Cook until a skewer inserted into the cake comes out clean or the cake has a smooth, dry surface. This should take around 20-25 minutes.

Step 4Slice and serve with berries and ice cream, or maple syrup.
Recipe Notes
Don't open the lid of the rice cooker while it's cooking. It is just like opening the oven when you are cooking a cake. It lets all of the heat out.
Most rice cookers have a non-stick coating but if yours does not then you need to give it a spray of cooking oil before you pour in the batter.
I used a very simple rice cooker and had to set it to cook twice, which took about 20-25 minutes.
