Ingredients

  • 375g white chocolate
  • green food colouring
  • 3 1/2 cups Rice Bubbles
  • 8 Choc Ripple biscuits
  • Red and green mini M&Ms, to decorate

Method

  • Step 1
    Cut four 25cm squares from baking paper, then cut each in half diagonally to create 8 triangles. Shape into cones and stick down with masking tape.
  • Step 2
    Melt chocolate in short bursts in the microwave or in a heatproof bowl placed over a saucepan of simmering water. Gradually add green food colouring, mixing well, until you reach the desired colour. Reserve 1-2 tbsp in a small container to use as glue for the decorations. Mix remaining green chocolate with rice bubbles. Spoon into baking paper cones, ensuring the mixture reaches the very tip. Lay flat on a tray and refrigerate to set.
  • Step 3
    Carefully unpeel the baking paper from the rice bubble trees. Use a sharp serrated knife to trim the base, if necessary, so the tree sits flat. Re-melt reserved chocolate. Use a skewer to place a small dot on the M&Ms and stick onto each tree. Place a little extra chocolate on the top of each biscuit, then position trees on top.
Recipe Notes

Decorate the trees with whatever sweets you fancy. Get the kids involved and be as creative as you like.

The trees look very festive served on a white platter sprinkled with a snowy carpet of desiccated coconut.

I made 8 x 15cm tall trees, but you can make smaller ones if you prefer.
