Raspberry and Mustard Glazed Baked Christmas Ham

Ingredients

  • 1 cup seedless raspberry jam
  • 1/2 cup Dijon mustard
  • 1 cooked bone-in ham

Method

  • Step 1
    Preheat the oven to 170C. Place an oven tray in the lowest position. Remove all other shelves. Line a large baking dish with 2 layers of non-stick baking paper.
  • Step 2
    Mix the jam and mustard in a small bowl and set aside.
  • Step 3
    Use a sharp knife to cut around the shank of the ham, around 10cm from the end. Run a knife under the rind around the edge of the ham. Gently lift the rind off in 1 piece by running your fingers between the rind and the fat.
  • Step 4
    Score the fat in a diamond or spiral pattern around 5mm deep. Transfer to prepared dish.
  • Step 5
    Brush a quarter of the glaze over the ham. Bake, brushing with glaze every 25 minutes, for 90 minutes.
Recipe Notes

You can use any other jam or marmalade you like including apricot or plum. You can also use a different kind of mustard.

I used a 8 - 10kg ham.
