A great Valentine's Day gift.
Ingredients
- 1 cup frozen raspberries
- 100 ml water
- 2 tbs lemon juice
- 1/2 cup raw sugar
- 1/2 tsp rosewater
- 2 tbs vanilla sugar
- 2 tbs agar-agar
- 80 g dark chocolate
- 2 tbs desiccated coconut
Method

Step 1Add the raspberries into a small pot and heat with 100ml of water. Add the lemon juice, sugar and rosewater, then bring to the boil for a second and then turn off the heat. Using a stick blender, blend the berries until smooth. Sieve through a fine sieve to get rid of the seeds.

Step 2Return raspberries to the pot and bring to the boil once again. Dissolve the agar-agar with a splash of water and then add to the raspberries. Stir well, turn off the heat and pour into a silicon ice cube tray with heart shapes. Refrigerate until firm!

Step 3When the jellies are firm, melt the chocolate with the vanilla sugar in a bowl over a water bath. Use a wooden skewer to dip the hearts into the chocolate. Place on baking paper to dry. Sprinkle with desiccated coconut.

Step 4Put into the fridge until the chocolate has firmed. Enjoy!
