Ingredients

  • 1 cup water
  • 1 cup sugar
  • 1 cup raisins washed
  • 1 tbs butter
  • 1 tbs apricot jam
  • 1 tsp bicarbonate of soda
  • 1 egg beaten
  • 2 cup plain flour

Method

  • Step 1
    Add first 6 ingredients to a saucepan and bring to the boil, stirring.
  • Step 2
    Reduce heat and simmer 5 minutes. Cool.
  • Step 3
    Stir in egg and fold through the flour.
  • Step 4
    Pour into greased and floured loaf pan. Cook at 180°C for 1 hour. Cool in pan.

Recipe Notes
Raisins can be soaked in sherry overnight before using. I cook the raisins in the morning and then bake in the afternoon. Sherry can be drizzled over cake when cooked. Serve buttered.
