Very easy to make - scrumptious with butter.
Ingredients
- 1 cup water
- 1 cup sugar
- 1 cup raisins washed
- 1 tbs butter
- 1 tbs apricot jam
- 1 tsp bicarbonate of soda
- 1 egg beaten
- 2 cup plain flour
Method

Step 1Add first 6 ingredients to a saucepan and bring to the boil, stirring.

Step 2Reduce heat and simmer 5 minutes. Cool.

Step 3Stir in egg and fold through the flour.

Step 4Pour into greased and floured loaf pan. Cook at 180°C for 1 hour. Cool in pan.

Recipe Notes
Raisins can be soaked in sherry overnight before using. I cook the raisins in the morning and then bake in the afternoon. Sherry can be drizzled over cake when cooked. Serve buttered.
