So fast, great for a side on a weeknight!
Ingredients
- 1 chilli chopped small
- 1/4 cup fresh parsley chopped
- 1/2 tsp lemon zest
- 1 shallots finely chopped
- 1/2 tsp olive oil
- 1 pinch salt *to taste
- 1 pinch pepper *to taste
- 1 tsp lemon juice
- 175 g microwaveable couscous and quinoa mix
Method

Step 1Prepare packet couscous and quinoa as directed on pack.

Step 2Mix with all other ingredients and serve as a side with anything you like or on its own.
Recipe Notes
Goes great with a piece of salmon, chicken breast or a steak. Lovely and fresh. I use the San Remo brand microwaveable couscous and quinoa packets.
