Very quick to prepare from leftover cooked lamb roast. Ideal for the next day's main meal for the family. An original recipe.
Ingredients
- 2 cup leftover cooked lamb
- 2 onion sliced
- 1 1/2 cup frozen mixed vegetables
- 415 g canned mushroom
- 1/4 cup red wine
- 1/2 tsp garlic crushed
- 2 tbs gravy powder
- 1 tsp water
- 1 tsp curry sauce hot *to taste
- 1/2 red capsicum thinly sliced
Method

Step 1Place enough lamb per person into a medium oval casserole dish.

Step 2Add onion and mushrooms.

Step 3Combine curry, wine and garlic.

Step 4Add capsicum and mixed vegetables.

Step 5Pour gravy mixture over ingredients.

Step 6Cover and bake at 170C for approximately 45 minutes.

Recipe Notes
Serve with mashed potatoes and green vegetables. Use leftover cold lamb leg and remove meat, frozen winter vegetable mix, tin mushrooms in sauce and hot curry sauce or curry powder.
