Ingredients

  • 2 cup leftover cooked lamb
  • 2 onion sliced
  • 1 1/2 cup frozen mixed vegetables
  • 415 g canned mushroom
  • 1/4 cup red wine
  • 1/2 tsp garlic crushed
  • 2 tbs gravy powder
  • 1 tsp water
  • 1 tsp curry sauce hot *to taste
  • 1/2 red capsicum thinly sliced

Method

  • Step 1
    Place enough lamb per person into a medium oval casserole dish.
  • Step 2
    Add onion and mushrooms.

    Combine curry, wine and garlic.
  • Step 4
    Add capsicum and mixed vegetables.
  • Step 5
    Pour gravy mixture over ingredients.
  • Step 6
    Cover and bake at 170C for approximately 45 minutes.

Equipment

  • 1 casserole dish
Recipe Notes

Serve with mashed potatoes and green vegetables. Use leftover cold lamb leg and remove meat, frozen winter vegetable mix, tin mushrooms in sauce and hot curry sauce or curry powder.
