Quick chicken and noodle stir-fry

This is an extremely quick and easy recipe I adapted from a recipe in Super Food Ideas magazine. - Judy1953

Ingredients

  • 450 g hokkien noodles
  • 2 tsp vegetable oil
  • 200 g chicken mince
  • 2 garlic cloves crushed
  • 2 cups Asian stir-fry vegetables
  • 1 tbs sweet chilli sauce
  • 1 tbs soy sauce
  • 1 tbs teriyaki sauce

Method

  • Step 1
    Place noodles in a heatproof bowl and cover with boiling water. Stand for 1 to 2 minutes. Drain.
  • Step 2
    Heat oil in a wok over high heat. Add garlic and mince, and stir-fry for 3 minutes.

  • Step 3
    Transfer to a bowl.
  • Step 4
    Add vegetables to wok and stir-fry for 3 to 4 minutes until tender.
  • Step 5
    Add mince mixture, noodles and sauces, and stir-fry for 2 minutes until heated through. Serve immediately.
Recipe Notes

This also works well with pork mince.

Teriyaki sauce or Honey Teriyaki Stir-Fry Sauce can be used.

Use whatever frozen Asian vegetables you prefer.
