This is an extremely quick and easy recipe I adapted from a recipe in Super Food Ideas magazine.
Ingredients
- 450 g hokkien noodles
- 2 tsp vegetable oil
- 200 g chicken mince
- 2 garlic cloves crushed
- 2 cups Asian stir-fry vegetables
- 1 tbs sweet chilli sauce
- 1 tbs soy sauce
- 1 tbs teriyaki sauce
Method

Step 1Place noodles in a heatproof bowl and cover with boiling water. Stand for 1 to 2 minutes. Drain.

Step 2Heat oil in a wok over high heat. Add garlic and mince, and stir-fry for 3 minutes.

Step 3Transfer to a bowl.

Step 4Add vegetables to wok and stir-fry for 3 to 4 minutes until tender.

Step 5Add mince mixture, noodles and sauces, and stir-fry for 2 minutes until heated through. Serve immediately.
Recipe Notes
This also works well with pork mince.
Teriyaki sauce or Honey Teriyaki Stir-Fry Sauce can be used.
Use whatever frozen Asian vegetables you prefer.
