This is the best one of this kind I have ever tasted - stays fresh for ages.
Ingredients
- 225 g butter
- 1 1/2 cup caster sugar
- 2 egg
- 1 1/2 cup mixed dried fruit
- 1 cup pumpkin mash warmed
- 1 1/2 cup plain flour
- 1 1/2 cup self-raising flour
Method

Step 1Preheat oven to 150C.

Step 2Beat butter and sugar together, then add eggs one at a time while beating.

Step 3Mix in mashed pumpkin carefully. Add fruit.

Step 4Sift flours together and fold in.

Step 5Bake in a greased, lined 20 cm x 20 cm tin for 1½ hours.
