Ingredients

  • 1 cup pumpkin mash warmed
  • 3/4 cup sugar
  • 2 cup self-raising flour
  • 2 egg
  • 125 g butter
  • 2 tbs golden syrup
  • 250 g mixed dried fruit
  • 1 pinch salt

Method

  • Step 1
    Beat pumpkin, sugar and butter for a few minutes. Add syrup and beat until creamy.
  • Step 2
    Add eggs, flour and fruit. Pour into 22 cm cake tin.

    Bake in moderate oven for 1½ hours.
