Ingredients

  • 1 cup caster sugar
  • 1 cup self-raising flour
  • 2 tbs plain flour
  • 2 tsp orange rind grated
  • 60 g soft butter
  • 1/2 cup orange juice
  • 2 eggs

Orange icing

  • 1 cup icing sugar
  • 15 g soft butter
  • 1 tbs orange juice

Method

  • Step 1
    Put sugar, flours and orange rind in processor with butter. Process until just combined.

  • Step 2
    Add orange juice then eggs, process until smooth.
  • Step 3
    Pour into a greased loaf pan lined with baking paper.
  • Step 4
    Bake at 180C for 35 minutes. Cool in pan.
  • Step 5
    Orange icing: Combine ingredients until smooth. Spread over cooled cake.
