An old family favourite, named after the friend who gave us the recipe.
Ingredients
- 8 potato cubed large
- 6 bacon rashers diced
- 310 g canned corn drained
- 1 cup cream
- 1/2 cup mayonnaise
- 1/2 tsp curry powder
- 1 tsp dijon mustard
- 1 pinch seasoning *to taste
- 1 cup cheddar cheese grated *to serve
- 1 cup coarse fresh breadcrumbs *to serve
Method

Step 1Boil potatoes until slightly firm.

Step 2Fry bacon until brown.

Step 3Place potatoes in a baking tray, combine corn and bacon.

Step 4Combine cream, mayonnaise, curry and mustard in a jug.

Step 5Pour over potatoes and season with salt and pepper.

Step 6Sprinkle with grated cheese and breadcrumbs.

Step 7Bake at 180C for 30-45 minutes, or until golden.
Recipe Notes
This dish is a good one to make ahead. If serving more than 8 I double the sauce ingredients. Use more curry powder to your liking, we sometimes omit the corn. A really lovely potato dish.
