Ingredients

  • 8 potato cubed large
  • 6 bacon rashers diced
  • 310 g canned corn drained
  • 1 cup cream
  • 1/2 cup mayonnaise
  • 1/2 tsp curry powder
  • 1 tsp dijon mustard
  • 1 pinch seasoning *to taste
  • 1 cup cheddar cheese grated *to serve
  • 1 cup coarse fresh breadcrumbs *to serve

Method

  • Step 1
    Boil potatoes until slightly firm.
  • Step 2
    Fry bacon until brown.
  • Step 3
    Place potatoes in a baking tray, combine corn and bacon.
  • Step 4
    Combine cream, mayonnaise, curry and mustard in a jug.
  • Step 5
    Pour over potatoes and season with salt and pepper.
  • Step 6
    Sprinkle with grated cheese and breadcrumbs.
  • Step 7
    Bake at 180C for 30-45 minutes, or until golden.
Recipe Notes

This dish is a good one to make ahead. If serving more than 8 I double the sauce ingredients. Use more curry powder to your liking, we sometimes omit the corn. A really lovely potato dish.
