This soup will have even the vegetable-haters coming back for seconds! It's the best soup I've ever made, and has been a family favourite for many years.

Ingredients

  • 1/2 butternut pumpkin diced
  • 1 sweet potato diced
  • 6 potato diced
  • 1 brown onion diced
  • 3 tsp crushed garlic
  • 6 cups chicken stock (liquid)

Method

  • Step 1
    Boil pumpkin and potatoes until soft.
  • Step 2
    In an electric fry pan, fry the onion until brown.

    Add pumpkin and potatoes and fry.
  • Step 4
    Once all vegetables are brown, place all ingredients into a pot and add chicken or vegetable stock.
  • Step 5
    Simmer until vegetables are soft and then mix well in a food processor.
Recipe Notes

If you don't have a food processor you can place all ingredients and stock into a pot and blend with a mixer stick. Vegetable stock can also be used.
