This soup will have even the vegetable-haters coming back for seconds! It's the best soup I've ever made, and has been a family favourite for many years.
Ingredients
- 1/2 butternut pumpkin diced
- 1 sweet potato diced
- 6 potato diced
- 1 brown onion diced
- 3 tsp crushed garlic
- 6 cups chicken stock (liquid)
Method

Step 1Boil pumpkin and potatoes until soft.

Step 2In an electric fry pan, fry the onion until brown.

Step 3Add pumpkin and potatoes and fry.

Step 4Once all vegetables are brown, place all ingredients into a pot and add chicken or vegetable stock.

Step 5Simmer until vegetables are soft and then mix well in a food processor.
Recipe Notes
If you don't have a food processor you can place all ingredients and stock into a pot and blend with a mixer stick. Vegetable stock can also be used.
