For all of you that love stews and casseroles - this one is a must try. Quick and easy and tastes amazing.
Ingredients
- 1/4 cup olive oil
- 1 brown onion chopped large
- 2 tbs chicken stock powder
- 2 tbs paprika
- 3 bay leaves
- 250 g red lentils dried
- 1 1/2 L water
- 5 potatoes large peeled roughly chopped
- 600 g sausage chopped cooked
- 1 pinch salt and pepper *to taste
Method

Step 1In a big stew pot, heat olive oil.

Step 2Cook the onion until soft.

Step 3Stir in the lentils, paprika, chicken stock, bay leaves, salt and pepper.

Step 4Add the water and the potatoes. Add extra water if the stew is too dry.

Step 5Cover and cook on medium heat until potatoes are almost soft.

Step 6Add the sausages and stir for 5 minutes or until potatoes are soft.
Recipe Notes
You can use any sausages you would like. I use chipolata sausages, because they have great flavour.
