Potato, Lentil and Sausage Stew

Ingredients

  • 1/4 cup olive oil
  • 1 brown onion chopped large
  • 2 tbs chicken stock powder
  • 2 tbs paprika
  • 3 bay leaves
  • 250 g red lentils dried
  • 1 1/2 L water
  • 5 potatoes large peeled roughly chopped
  • 600 g sausage chopped cooked
  • 1 pinch salt and pepper *to taste

Method

  • Step 1
    In a big stew pot, heat olive oil.
  • Step 2
    Cook the onion until soft.
  • Step 3
    Stir in the lentils, paprika, chicken stock, bay leaves, salt and pepper.
  • Step 4
    Add the water and the potatoes. Add extra water if the stew is too dry.
  • Step 5
    Cover and cook on medium heat until potatoes are almost soft.
  • Step 6
    Add the sausages and stir for 5 minutes or until potatoes are soft.
Recipe Notes
You can use any sausages you would like. I use chipolata sausages, because they have great flavour.
