Ingredients

  • 225 g bacon rashers roughly chopped
  • 1 potato diced large
  • 1/2 onion diced large
  • 1/2 capsicum diced
  • 8 large egg
  • 1/4 tsp salt
  • 0.125 tsp ground black pepper
  • 125 g cheddar cheese grated
  • 1 garlic clove minced

Method

  • Step 1
    Pre-heat oven to 180C.
  • Step 2
    Fry bacon in a skillet and set aside on paper towels.
  • Step 3
    While the bacon is frying, peel the potato and cut it into 1 cm cubes.
  • Step 4
    Pour the excess fat from the frying pan. Leave a little in the pan to saute the vegetables.
  • Step 5
    Saute the potato, onion, garlic, and pepper until the potato has cooked and starts to brown.

    Beat the eggs, salt, and pepper together in a bowl.
  • Step 7
    Add the bacon to the vegetables in the skillet.
  • Step 8
    Pour egg mixture over the bacon and vegetables.
  • Step 9
    Spread grated cheese over the top.
  • Step 10
    Cook on the stovetop over medium low heat for 5-10 minutes until the bottom of the frittata becomes firm.
  • Step 11
    Place the skillet in the oven on the highest rack and bake for 10-12 minutes or until the frittata is firm and cheese is browned.
Recipe Notes

You can substitute any bite sized vegetables, or use different meats or cheeses. It is a great recipe to get rid of leftovers.
