Pork casserole for the family.
Ingredients
- 1 kg diced pork
- 2 tbs butter
- 1 cup carrot sliced
- 1 onion chopped
- 1 pinch seasoning *to taste
- 1 1/2 cups chicken stock (liquid)
- 3/4 cup pineapple juice
- 4 tbs cornflour
- 1 tbs white vinegar
- 1 tbs water
- 1 tbs soy sauce
- 4 tbs sugar
- 225 g (pieces) canned pineapple
Method

Step 1Fry pork in butter or margarine until meat changes colour.

Step 2Add carrots, onions, pepper and salt.

Step 3Stir in stock and pineapple juice, cover pan and cook for approximately 1½ hours until pork is tender.

Step 4In a small jug, blend cornflour, vinegar, water, soy sauce and sugar.

Step 5Stir into pork and vegetable mixture.

Step 6Add pineapple pieces.

Step 7Cook over slow heat until mixture boils.

Step 8Serve with pasta, potatoes and green vegetables.
