Ingredients

  • 1 kg diced pork
  • 2 tbs butter
  • 1 cup carrot sliced
  • 1 onion chopped
  • 1 pinch seasoning *to taste
  • 1 1/2 cups chicken stock (liquid)
  • 3/4 cup pineapple juice
  • 4 tbs cornflour
  • 1 tbs white vinegar
  • 1 tbs water
  • 1 tbs soy sauce
  • 4 tbs sugar
  • 225 g (pieces) canned pineapple

Method

  • Step 1
    Fry pork in butter or margarine until meat changes colour.
  • Step 2
    Add carrots, onions, pepper and salt.

  • Step 3
    Stir in stock and pineapple juice, cover pan and cook for approximately 1½ hours until pork is tender.
  • Step 4
    In a small jug, blend cornflour, vinegar, water, soy sauce and sugar.
  • Step 5
    Stir into pork and vegetable mixture.
  • Step 6
    Add pineapple pieces.
  • Step 7
    Cook over slow heat until mixture boils.
  • Step 8
    Serve with pasta, potatoes and green vegetables.
Recipe Notes

I use lean diced pork.
