Ingredients

  • 1 cup plain flour
  • 1/4 tsp salt
  • 1/4 tsp bicarbonate of soda
  • 1 egg
  • 1 cup milk
  • 1 cup tasty cheese grated
  • 2 cup leftover roast cooked pork chopped
  • 1/4 cup green apple broken into chunks cooked
  • 1/4 cup frozen peas cooked
  • 1 pinch pepper *to taste
  • 1 tbs dijon mustard
  • 3 eschalots finely chopped
  • 4 tbs olive oil

Method

  • Step 1
    Combine flour, salt, bicarbonate of soda, egg and milk.
  • Step 2
    Add meat, cheese, apple, peas, mustard, shallots and pepper.

  • Step 3
    Refrigerate for half an hour.
  • Step 4
    Heat olive oil, and shallow fry spoonfuls until golden brown.
  • Step 5
    Drain on absorbent paper and serve.
Recipe Notes

Great with mashed potato. Any leftover meat or vegetables can be used. Omit the apple if desired.
