Easy to substitute whatever you have on hand and great for the budget.
Ingredients
- 1 cup plain flour
- 1/4 tsp salt
- 1/4 tsp bicarbonate of soda
- 1 egg
- 1 cup milk
- 1 cup tasty cheese grated
- 2 cup leftover roast cooked pork chopped
- 1/4 cup green apple broken into chunks cooked
- 1/4 cup frozen peas cooked
- 1 pinch pepper *to taste
- 1 tbs dijon mustard
- 3 eschalots finely chopped
- 4 tbs olive oil
Method

Step 1Combine flour, salt, bicarbonate of soda, egg and milk.

Step 2Add meat, cheese, apple, peas, mustard, shallots and pepper.

Step 3Refrigerate for half an hour.

Step 4Heat olive oil, and shallow fry spoonfuls until golden brown.

Step 5Drain on absorbent paper and serve.
Recipe Notes
Great with mashed potato. Any leftover meat or vegetables can be used. Omit the apple if desired.
