My mum use to cook these. I have just recently asked for the recipe. My family love them so much, and it's so easy.
Ingredients
- 500 g beef mince
- 3/4 cup rice
- 1 tbs olive oil
- 1 onion diced medium
- 1 garlic clove crushed
- 1 tsp parsley chopped fresh
- 1/4 cup oregano
- 1 tsp fresh basil
- 425 ml tomato soup
- 500ml vegetable stock
Method

Step 1Add rice to salted boiling water and cook for 3-4 minutes.

Step 2Strain under cold water to stop the cooking process.

Step 3Saute onion and garlic in oil until softened. Cool slightly.

Step 4Place mince in a large bowl and add cooled rice and onion mixture.

Step 5Add salt and pepper, parsley and oregano.

Step 6Mix mixture with hands and shape into desired sized meatballs.

Step 7Place meatballs in a single layer, ensuring they do not touch.

Step 8Pour over tomato soup mixed with some stock to half cover the meatballs.

Step 9Bake at 180C for 40 minutes, turning meatballs a few times during cooking.

Step 10Add more water or more stock as needed.
Recipe Notes
If there are some left over my youngest son loves them in his sandwiches the next day for school, sliced thinly with some grated cheese.
