I love making these muffins to serve with soup.
Ingredients
- 200 g pumpkin
- 1 cup self-raising flour
- 1/2 cup instant polenta
- 125 g butter melted
- 1 egg
- 1/4 cup milk
- 1 tsp chilli flakes
- 1/2 cup tasty cheese grated
- 1 tbs pepitas
Method

Step 1Preheat oven to 180C.

Step 2Peel pumpkin and chop into 3cm pieces. Place in a microwave safe dish with some water and microwave for 5 minutes or until soft. Remove from bowl and mash. Set aside to cool slightly.

Step 3In a medium mixing bowl combine flour, polenta and chilli flakes.

Step 4In a separate mixing bowl combine pumpkin, butter, egg, milk and cheese. Fold the wet ingredients into the dry ingredients. Do not overmix. Spoon mixture into a 12 hole muffin tin. Top each muffin with pepitas, pressing slightly into mixture.

Step 5Place into preheated oven and bake for 15 minutes. Remove and serve with soup.
