Ingredients

  • 200 g pumpkin
  • 1 cup self-raising flour
  • 1/2 cup instant polenta
  • 125 g butter melted
  • 1 egg
  • 1/4 cup milk
  • 1 tsp chilli flakes
  • 1/2 cup tasty cheese grated
  • 1 tbs pepitas

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Peel pumpkin and chop into 3cm pieces. Place in a microwave safe dish with some water and microwave for 5 minutes or until soft. Remove from bowl and mash. Set aside to cool slightly.
  • Step 3
    In a medium mixing bowl combine flour, polenta and chilli flakes.
  • Step 4
    In a separate mixing bowl combine pumpkin, butter, egg, milk and cheese. Fold the wet ingredients into the dry ingredients. Do not overmix. Spoon mixture into a 12 hole muffin tin. Top each muffin with pepitas, pressing slightly into mixture.
  • Step 5
    Place into preheated oven and bake for 15 minutes. Remove and serve with soup.
