Ingredients

  • 450 g pear juice
  • 4 peppercorns
  • 2 whole cloves
  • 1 cinnamon stick
  • 2 pears cored quartered

Method

  • Step 1
    In a saucepan, bring the juice, peppercorns, cloves and cinnamon stick to the boil.
  • Step 2
    Reduce heat and add the pears.
  • Step 3
    Simmer for approximately 10 minutes, or until the pears are tender when pierced with a knife.
  • Step 4
    Place pears in a bowl.
  • Step 5
    Boil the juice mixture again for 3 minutes.
  • Step 6
    Strain over the pears.
Recipe Notes

Use ripe pears. Check they are ripe by pressing them gently on their skin. If it yields slightly and smells fresh and ripe, it's good.
