Ingredients

  • 1 tsp oil
  • 4 garlic cloves
  • 1 tbs ginger grated
  • 1 leek chopped
  • 1.5L salt-reduced chicken stock
  • 1 tbs soy sauce
  • 1 tbs kecap manis
  • 2 chicken breast fillets
  • 2 corn cobs
  • 1 packet rice noodles *to serve
  • 1 cup baby spinach

Method

  • Step 1
    Fry garlic, ginger and leek or onion in oil.

  • Step 2
    Add chicken stock, soy sauce and kecap manis. Bring to boil.
  • Step 3
    Add chicken, reduce to a simmer, cover and cook for approximately 8 minutes or until chicken is cooked.
  • Step 4
    Remove chicken. Remove corn kernels from corncob. Add corn kernels and rice noodles. Simmer until rice noodles loosen and soften.
  • Step 5
    Meanwhile, shred chicken.
  • Step 6
    Add chicken and a handful of baby spinach to rice noodles. Cover until spinach has wilted and chicken is warmed through. Serve.
Recipe Notes

This would also be nice with a little chilli.
