Yummy comfort food that takes no time to whip up. Great for a lazy winter's dinner.
Ingredients
- 1 tsp oil
- 4 garlic cloves
- 1 tbs ginger grated
- 1 leek chopped
- 1.5L salt-reduced chicken stock
- 1 tbs soy sauce
- 1 tbs kecap manis
- 2 chicken breast fillets
- 2 corn cobs
- 1 packet rice noodles *to serve
- 1 cup baby spinach
Method

Step 1Fry garlic, ginger and leek or onion in oil.

Step 2Add chicken stock, soy sauce and kecap manis. Bring to boil.

Step 3Add chicken, reduce to a simmer, cover and cook for approximately 8 minutes or until chicken is cooked.

Step 4Remove chicken. Remove corn kernels from corncob. Add corn kernels and rice noodles. Simmer until rice noodles loosen and soften.

Step 5Meanwhile, shred chicken.

Step 6Add chicken and a handful of baby spinach to rice noodles. Cover until spinach has wilted and chicken is warmed through. Serve.
Recipe Notes
This would also be nice with a little chilli.
