Give dough the flick and boost your mushroom intake by using delicious, hearty portobello mushrooms as your pizza bases. Prep your ingredients while the mushrooms are baking, then let everyone top their own before a final turn through the oven to melt the cheese.
Ingredients
- 12 large Portobello mushrooms
- 1 tbsp olive oil
- 1 cup pizza sauce
Ham and pineapple
- 1 cup grated mozzarella cheese
- 50g smoked ham, sliced
- 1 pineapple ring, diced
Meat lovers
- 1 cup grated mozzarella cheese
- 1 beef sausage, chopped
- 1 rasher bacon, sliced
- 12 slices pepperoni
Cheese supreme
- 1 cup grated mixed pizza cheese or 3-cheese blend
- few sprigs fresh oregano (optional)
Method

Step 1Preheat oven to 200C. Use a damp paper towel to gently wipe any dirt from mushrooms. Remove stems and place them (stem-side up) on an oven tray lined with baking paper. Drizzle over olive oil and season well with salt and pepper. Bake for 10 minutes.

Step 2Remove from oven. Spoon pizza sauce onto each mushroom. For ham and pineapple, top with some of the cheese, then sprinkle over ham and pineapple and finish with a little extra cheese. For meat lovers, top with cheese, then arrange the meat on top. For cheese supreme, top with cheese and add a few oregano leaves.

Step 3Bake for a further 5-8 minutes until cheese has melted.

Notes:
The bigger the mushrooms, the better. Large flats would also be great.
Use whatever toppings you may like.
