Ingredients

  • 1 1/2 cup self-raising flour
  • 6 tbs butter
  • 3/4 cup caster sugar
  • 2 egg
  • 1 pinch salt
  • 1/4 cup milk

Topping

  • 3 tbs butter
  • 1/2 cup brown sugar
  • 225 g canned pineapple reserve liquid
  • 1 cup glace cherries

Method

  • Step 1
    Beat butter and sugar to a cream. Add eggs, one at a time, beat.
  • Step 2
    Sift flour and salt together.
  • Step 3
    Mix milk and pineapple juice together. Add to the butter mixture alternately with the flour and mix until smooth.
  • Step 4
    Topping: Cream butter and brown sugar.
  • Step 5
    Spread over the base of a greased and lined 20 cm deep cake tin.
  • Step 6
    Arrange pineapple over base with the cherries.
  • Step 7
    Carefully spread cake mixture over the topping.
  • Step 8
    Bake at 180C for 1 hour.
  • Step 9
    Allow to stand for 5 minutes before turning out.
  • Step 10
    Serve hot with custard or ice-cream.
