This is a yummy cake.
Ingredients
- 1 1/2 cup self-raising flour
- 6 tbs butter
- 3/4 cup caster sugar
- 2 egg
- 1 pinch salt
- 1/4 cup milk
Topping
- 3 tbs butter
- 1/2 cup brown sugar
- 225 g canned pineapple reserve liquid
- 1 cup glace cherries
Method

Step 1Beat butter and sugar to a cream. Add eggs, one at a time, beat.

Step 2Sift flour and salt together.

Step 3Mix milk and pineapple juice together. Add to the butter mixture alternately with the flour and mix until smooth.

Step 4Topping: Cream butter and brown sugar.

Step 5Spread over the base of a greased and lined 20 cm deep cake tin.

Step 6Arrange pineapple over base with the cherries.

Step 7Carefully spread cake mixture over the topping.

Step 8Bake at 180C for 1 hour.

Step 9Allow to stand for 5 minutes before turning out.

Step 10Serve hot with custard or ice-cream.
