Ingredients
- 1 pineapple diced small
- 1 red chillies finely chopped large
- 1 carrot thinly sliced
- 1/4 red cabbage thinly sliced
- 2 long green shallots finely chopped
- 1/4 cup coriander leaves
Dressing
- 100 ml rice wine vinegar
- 50 ml dry sherry
- 2 tbs water
- 1/4 cup white sugar
- 1/4 tsp sea salt
- 1 clove garlic grated
- 2 cm ginger grated
Method

Step 1Combine all salad ingredients in a large salad bowl.

Step 2Add all dressing ingredients except ginger and garlic to a fry pan on low heat and stir until sugar dissolves. Then, add ginger and garlic. Reduce heat and simmer for 10 mins. Let it cool and add to salad just before serving.
