Ingredients

  • 2 medium onions, chopped
  • 4 medium zucchinis, grated
  • 1 cup cheddar cheese
  • 6 eggs
  • 200g shredded, cooked chicken breast (smoked chicken works well)
  • 2 tablespoons fresh basil, chopped
  • 4 tablespoons self raising flour
  • 1/2 cup olive oil (or rice bran oil)
  • Extra oil for greasing the pie maker

Method

  • Step 1
    Break the eggs into a large bowl and beat gently.
  • Step 2
    Add the onions, zucchinis, cheese and chicken to the egg mixture, and stir to combine. Add the flour and olive oil in alternating fashion, and stir.
  • Step 3
    Grease the pie maker holes. Turn the pie maker on to heat.
  • Step 4
    Add the mixture to the pie maker and cook for approximately 10 minutes until cooked on top.
  • Step 5
    Remove with a spoon and enjoy warm for breakfast, or cool and add to school lunches.
Recipe Notes

Cook these in a greased muffin tin if you don’t have a pie maker.
